Cream Cheese Frosting

Ingredients:

16 ounces cream cheese (2 blocks) room temperature

1 1/2 cup room temperature salted butter (3 sticks)

2 lbs confectioners sugar (1 bag)

1 T. vanilla extract

1/2 tsp. salt

Instructions:

  1. Beat cream cheese until light and fluffy. It is very important to beat the cream cheese until smooth as lumps will remain in the frosting if they are not creamed out at this stage.
  2. Add room temperature butter and beat until mixture appears fluffy and has doubled in size. This is the most important stage in making this frosting. Make sure to scrape down sides of bowl to insure all ingredients are fully incorporated.
  3. Next, add confectioners sugar, salt and vanilla. Mix on high until mixture takes on a thick, fluffy consistency. If your desired consistency is not reached add a tablespoon of heavy whipping cream at a time while beating until desired consistency is achieved.
