y grandmother was a domestic goddess. She took homemaking to a whole new level and made it look effortless. So, it will come as no surprise that at my grandmother’s funeral a fudge story was included in her eulogy. My grandmother was a young girl during the great depression. Food was rationed and butter was a valuable commodity. One day my grandmother was questioned as to where the week’s rations of butter had gone. My grandmother was quick to boast that she had used the last pound of butter to make fudge. That was the beginning of a legendary candy maker, that I am proud to call my mentor. The patience that great woman possessed resulted in smooth, never grainy fudge perfection.

My grandmother would turn in her grave if she knew I was sharing a cheaters fudge recipe that involves using marshmallow creme. My grandmother did not take shortcuts when making fudge. Her recipe, however, is NOT for beginners or the novice fudge maker. By adding marshmallow creme to the fudge mixture you coat the sugar crystals, keeping them nice and small. Small sugar crystals equate to smooth non-grainy fudge. I have over the years tampered with versions of marshmallow creme fudge recipes, adding more and more butter until I created a version as rich as my grandmother’s original.

I can definitely see how I am genetically related to a woman who honestly felt the last pound of butter she had should be used to create fudge. However, in this busy modern world…I think we all deserve to cheat a little. Enjoy this recipe as the perfect compromise between classic hand-turned flavor and modern-day convenience!

Chocolate Coconut Haystack

his is quite simply the easiest recipe you will ever make. It only requires two ingredients…but two perfectly paired ingredients. Even people who think they hate coconut, love the nutty flavor of toasted coconut in mounds of milk chocolate. It is amazing how crunchy the coconut stays completely enrobed in chocolate.

Any candy store I visit is immediately scoured for coconut haystacks. Every box of chocolates I receive is instantly searched for a coconut cluster.  They are classic flavors you can never go wrong with. Sometimes a truffle or cream center can be disappointing, but never a haystack.

This is without a doubt the quickest candy to make, which is helpful as it gets so many requests. It is hard to explain just how good these mounds of chocolate are without popping one in your mouth.  The oil from the toasted coconut gives the milk chocolate a beautiful crisp sheen. The only thing that rivals how amazing they look is just how great they taste!

Christmas Crack

ecember is here and that means it is officially time to make Christmas Crack. This sweet and gooey Chex mix goes by many names…my kids call it crack. Their friends now request crack, and the name has just kinda stuck!

One Christmas about twenty years ago a neighbor brought a version of this recipe to our door. I tried it, and I am ashamed to say that as much as I liked it, I instantly thought of ways I could make it better. The mixture had great flavor but the texture was crunchy. I thought it should be soft and gooey. Over the years I have changed the nuts from almonds to cashews. Added coconut, then decided to toast the coconut. Changed the syrup to include honey and then finally added pretzels. This recipe has evolved so many times, it barely resembles the original.

I am warning you, there is a reason people joke that this snack mix should be called crack…it really is incredibly addicting! I can’t think of a single time I have made just one batch of this mix. I always make multiple batches that cover my kitchen island. Although we still affectionately refer to it as Christmas Crack. Let me warn you that this will soon become New Year’s Crack…Valentine’s Day Crack…Easter Crack…etc.  In no time at all you will be requested to bring this to every gathering you are invited to. We have often joked that we get invited places just to bring the Chex mix. It is seriously that good!!! Pin this recipe as you will soon find yourself needing it over and over.

Peanut Butter Chocolate Chip Pie

or those of you who have ever made a Nestle toll House pie, you know that there are few things in life better than a warm slice. The gooey center is the adult version of eating cookie dough straight from the bowl. One day while making peanut butter chocolate chip cookies, I decided this world needed a peanut butter version of this pie. I scoured the internet for a recipe to no avail. I began experimenting and making test pies. Although the journey to the final product was delicious this version was the clear winner. The only thing that can make this pie better is to serve it with a scoop of vanilla ice cream on top…enjoy!

No-bake Cherry Cheese Pie

he countdown to Thanksgiving has begun and there is little time left for pie baking. I am sharing our quickest pie in the recipe box. This pie is so delicious that your friends and family will never know what little effort went into its preparation.  It is beautiful on the table and a sure crowd-pleaser. Most no-bake cheesecakes involve cool whip…well those are two four-letter words that are not allowed in my kitchen. This cherry cheese pie combines cream cheese and sweetened condensed milk for a silky smooth texture. I like to add vanilla bean paste instead of vanilla extract to this recipe. The vanilla bean seeds give an elegant look to the pie filling…people will think this dessert is not as simple as it truthfully is!

Lemon Sour Cream Pie

emon Sour Cream Pie is my mom’s all-time favorite pie. When I was little she would take me on lunch dates to a local restaurant that served a similar, but layered pie. One Thanksgiving I wanted to surprise her and worked to replicate this pie as closely as I could. Now, I am of course biased but I think this version is better than the original. It isn’t layered like the one I had as a child…rather the sour cream is incorporated throughout the lemon. This pie is not too sweet, not too sour and creates the perfect compromise for everyone who loves lemon pie but hates the mounds of cooked egg whites on lemon meringue. This filling is so versatile that my daughter, Maddie has started making mini tarts with it. So, from our lemon lovin family to yours…ENJOY!!!

Best Ever Key Lime Pie

ey lime pie is certainly a favorite at our  house. Today, as Grayson was downing his second piece of pie he asked, “mom, if this is lime pie…why isn’t it green”?  Why indeed. Grayson is a wealth of useless knowledge so I felt it my duty as his mother to add to this boys encyclopedia mind of rainy day facts…

Key limes were named after the Florida keys where they abundantly grow. But, unlike Persian limes, key limes are smaller, yellow and much more aromatic. They have a thinner yellow skin that makes them more perishable and harder to find in grocery stores year round (for this reason I often use Nellie & Joe’s bottled key lime juice). Key limes are more acidic. This acid is what created the chemical reaction in early key lime pies. In the early twentieth century sponge fishermen in Florida would live on boats for long periods of time. They often had limes, eggs, and canned milk. They learned that the acid in the limes would create a chemical reaction in the protein structure of the milk and eggs causing it to thicken without being cooked. Since they didn’t have a heat source to cook the mixture this was a very popular dessert.

Now, many people still use eggs yolks to thicken key lime pie. I however, don’t particularly feel comfortable feeding my family raw eggs so have come up with a recipe that thickens with very little cook time and has better flavor than its egg containing counterparts. I do zest regular green store bought Persian limes when I can’t find key limes in the store and you really can’t tell the difference.

Perfect Top Pecan Pie

IMG-3941Baking began early this morning as Thanksgiving is less than a week away. I asked Kennedy to go to the basement and grab a bag of dry beans. Why…do you need beans? Are you going to blind bake your pie? I looked at her a little shocked. How do you know what a blind bake is, I asked. Mom, I watch The Great British Baking Show. I laughed and tried to call her bluff. What temperature should the oven be set for a blind bake, I asked. Duh mom, 400° or 350° if your ovens because they are convection. I laughed so hard I cried a little.

The back story that makes this so funny is that Kennedy is my child that randomly starts talking with an English accent. No, she does not have FAS, Foreign Accent Syndrome (look it up…it’s a real disorder), she just thinks it is hilarious. We will be sitting in a restaurant and she will suddenly order her food in an English accent. Sometimes we all join in because we don’t want her to look silly or out of place. So now, I no longer think my daughter has a mental illness…I blame The Great British Baking Show, This certainly explains the tent she put up in the backyard!!!

For those of you who don’t think it is fun to talk in an English accent while binge-4D770F6C-65B9-44A5-992C-F90C54C0D248watching The Great British Baking Show. Blind baking is baking or partially baking the pie crust before pouring in pie filling to ensure a flaky crust. Don’t feel bad if you didn’t know this…my husband walked in the kitchen while I was preparing to blind bake the shell and said, “what-cha making hun…a bean pie”? You can tell who shares my DNA and who doesn’t.

Blind baking, along with coarsely chopping the nuts, is our time tested proven steps to perfect pecan pie. Most people like to leave the pecans halved and even place them in designs on the top of the pie filling. While I will admit this looks amazing… the taste doesn’t come close. By chopping the pecans, the butter, sugar, and salt in this recipe caramelize around the small pecan pieces to form a top crust that tastes like a brittle or toffee. It’s crunchy, sweet, salty and seriously delicious!!!

Extra Creamy Pumpkin Pie

his pumpkin pie is hands down the best pumpkin pie you will ever taste! It is so creamy with a perfectly smooth texture. What is the secret? Cream cheese. It is not a large amount of cream cheese, just 8 ounces but it makes all the difference in the world. Many people may not even know cream cheese has been added. The second key is using real heavy whipping cream. So many people use evaporated milk or sweetened condensed milk. These pumpkin pie recipes were put on the sides of cans to sell products but are nowhere near as flavorful or creamy as using the real deal. So, take our pumpkin pie challenge this Thanksgiving and try adding cream cheese and real cream to pumpkin pie…your friends and family will taste the difference!

Amazing Apple Pie

s many of you know the motivation to starting our baking blog was to write down recipes (WITH MEASUREMENTS), teach them to my daughters and document the journey. I am here to say, making apple pie today proved that this is exactly what we need to be doing.

I was peeling apples and preparing ingredients when the girls came in the kitchen. Oh yum! Are we making apple pie today? The week before Thanksgiving is known as “pie-week” at our house. They asked if I had enough ingredients for them to make their own pie. Side by side we made two apple pies. The pie the girls were working on, I can honestly say I never touched. As I watched the girls working together, I didn’t know whether to be more proud that my girls were peacefully working together, or the crazy amazing lattice work they were creating on the upper crust of this pie. Made from scratch apple pie with lattice work intimidates most bakers and yet this pie, made by my two teenage daughters looked like it could be featured on the Food Network.

I decided that as I blogged this recipe I would only take pictures of my daughters pie. I want to illustrate to everyone who has ever been afraid of making apple pie, just how easy it can be. With the right crust (linked below), and the secret step to our filing, you too can make the perfect apple pie.
